As summer is winding down (at least in some places...it's still in the 90s here!), it's time to start those Fall-inspired recipes! Typically, when you hear "fall recipes" you immediately think of Pumpkin or Pumpkin-spice. But there are SO many other great foods in season this time of year! Autumn is a great time for cranberries, pomegranates, pears, grapes, and passion fruit... and not to mention the year-round fruits like bananas, apples, lemons, etc.! Sparkling water can be paired with seasonal fruits. So try some of these sparkling water recipes!

The past few weeks I've been hooked on Gerolsteiner's Sparkling Mineral Water. If you don't know much about Gerolsteiner, then you're missing out! Gerolsteiner's Sparkling Water has so many benefits! But I'll be honest, drinking the same thing day after day can get monotonous. Sometimes I want to change things up. The tricky part is making sure that I'm staying in line with my health and fitness goals while doing it. I don't want to consume hundreds of empty calories or excess processed fillers in my drinks. So, I've come up with a couple of seltzer water recipes with fruit!


Fruit Infused Sparkling Water Pairings

Try making these fruit water recipes  with these fruit pairings and sparkling water! The fruit infusion creates some AMAZING sparkling water recipes! 

My tip for this is to combine your Gerolsteiner Sparkling Water and fruit into a sealable pitcher. Then let it fuse for a couple of hours in the fridge!

Since starting Cardio, Weights, and Protein Shakes, I have been able to tap into my creativity — in the kitchen! Trying out new recipes, making my own recipes, and perfecting old recipes… I love it! I recently started buying Café Breaks pudding (see my previous post here), and I decided to explore some options for a summer recipe incorporating the delicious treat. Here in Georgia, the temperature gets over 90 degrees daily. So I knew I needed a cool snack to combat the summer heat.  I also don’t have a lot of time on my hands to make snacks. So it had to be a simple recipe, too.

  1. Café Breaks Pudding (flavor of your choice)
Instructions
  1. Purchase pack of Café Breaks pudding in the flavor of your choice (they come in packs of 4)
  2. Pour pudding into popsicle mold (plastic popsicle mold, paper/plastic cup)
  3. Insert popsicle stick into center of each pudding container
  4. Freeze for 4 hours or until frozen/firm
  5. Remove from popsicle container
  6. Enjoy!

Peanut Butter Chocolate Chip Protein Balls Recipe

Have you ever heard the statement “abs are made in the kitchen” and wondered what that meant? You’re not alone. The point behind that sentence is that you have to eat well in order for your muscles to show. If you eat junk, then you’ll have too much body fat covering up the muscles that you work so hard for in the gym. You can’t out-work a bad diet. Trust me.

That being said, I’ve been trying out different recipes that incorporate protein powder in them. Extra points for recipes that taste like dessert. The first recipe I tried out was the Triple Chocolate Protein Muffins! And man, oh man, they were AMAZING!

My second recipe, Peanut Butter Chocolate Chip Protein Bites, was a hit as well! I found this recipe on Popsugar and knew I’d love it. I used Walmart’s Purely Inspired Chocolate protein powder (which is a gluten-free, 100% plant-based, protein powder!! Woot woot!). You can get this protein at Walmart! These are low fat protein balls…. and they’re clean eating protein balls!

Peanut Butter Chocolate-Chip Protein Bites

  1. 1/3 cup natural peanut butter
  2. 1/4 cup honey
  3. 1 scoop of Purely Inspired Chocolate Protein (can be purchased at Walmart!)
  4. 3 tablespoons ground flaxseed
  5. 3 tablespoons dark chocolate chips
Instructions
  1. Mix ingredients in a bowl
  2. Roll into 10 balls
  3. Refrigerate until firm
  4. Enjoy!

Who else LOVES guilty-free desserts that taste good and are packed with protein?! Or how about chocolate muffins that won’t kill your macros?! I don’t know about you… but for me, YES. Give me all the desserts and chocolate and wonderful-tasting things in the world. Over the past few weeks, I have researched and tried out some dessert recipes that would satiate my sweet tooth and would also help me reach my protein macro goal. Double plus, if it can help me achieve my fitness goals too. Triple plus, if it’s not hard to make! To keep you from falling out of your chair in suspense, I’ll give you the winner: Protein Muffins.




Chocolate Protein Powder Muffins

I’ve been using Purely Inspired Protein Powder, which is gluten-free, 100% plant-based, protein powder for the protein. I love that it is an artificial coloring/flavoring free plant protein. What makes this recipe even better is that you put protein bar pieces in it too! Extra protein for the win! These protein muffins are full of protein, so they’ll fill you up and keep your stomach satisfied for more than twenty minutes like your typical, sugary muffins will. 

What’s so special about these protein powder muffins?

  1. You can eat these for breakfast. Because they’re muffins.
  2. But you can also eat them as a DESSERT. Because they’re TRIPLE CHOCOLATE.
  3. They’re my favorite clean eating muffins!
  4. It doesn’t take many ingredients or a lot of time.

Ingredients
  1. 1 Mission1™ Protein Bar
  2. 3 Tablespoons of Skim, Almond, or Coconut Milk
  3. 3 Tablespoons of (Dark) Chocolate pieces
  4. 2 Tablespoons Coconut or Oat Flour
  5. 1 Egg
  6. 2 Tablespoons of Purely Inspired® protein powder from @Walmart
Instructions
  1. Preheat the oven to 400 degrees
  2. Chop the Mission1™ Protein Bar into bite-sized pieces
  3. Put the milk and chocolate pieces in a small bowl and microwave until melted
  4. Mix the flour, egg, Purely Inspired® protein powder (can add some water if it's too thick), add the melted chocolate mixture to it and mix again
  5. Spray non-stick spray in 4 places of the muffin pan
  6. Fill 4 with the batter
  7. Place protein bar bites on the top of each
  8. Bake at 400 degrees for 9-10 minutes
  9. Cool

This is hands-down one of my favorite meals. It’s fairly easy to prepare and make… and MAN is it delicious!! I included very detailed instructions for you all! ENJOY!

 

Pineapple Chicken Skewers

Ingredients
  1. 1 pound boneless, skinless chicken breasts, cut into 20 1 1/2 inch pieces
  2. 1 red or green bell peppers, cut into 1 1/2 inch pieces
  3. 1 onion, cut into 1 1/2 inch pieces
  4. 20 fresh pineapple chunks (1 1/2 inch chunks)
  5. 10 strips of bacon, cut into halves
  6. 8-12 6 inch skewers
Sauce
  1. 1/3 cup Real Maple Syrup
  2. 2/3 cup BBQ Sauce (my favorite is Sweet Baby Rae's BBQ Sauce!)
Instructions
  1. Combine maple syrup and barbecue sauce, set aside
  2. Submerge skewers in warm water for 20 minutes (I usually put water in a large bowl and do half of the skewer at a time. You can also get a baking pan with edges, cover it with warm water, and place the skewers on the pan).
  3. Cut all the ingredients into 1 1/2 inch pieces (Doesn't have to be exact! Just big enough to be fit onto a skewer).
  4. Cook bacon in frying pan until about 1/2 of the way done. Don't let it cook completely. You want to be able to bend the bacon in order to wrap it around the chicken in the next step!
  5. Drain bacon slices briefly then wrap each piece of bacon around each piece of chicken
  6. Thread the skewers (I use this order, but you can do whatever you want!): bell pepper, onion, bacon wrapped chicken, pineapple chunk, bell pepper/onion, bacon wrapped chicken, pineapple chunk, bell pepper/onion. Depending on how big you want each skewer to be, increase or decrease the number of ingredients on each skewer.
  7. Place skewers on a baking sheet topped with aluminum foil. Instead of aluminum foil, you can coat the pan with non-stick cooking spray.
  8. Once all skewers are threaded, slather the sauce on the skewers. Leave about 1/4 of the sauce for later.
  9. Set oven to BROIL. You'll want the pan to be about 4 inches from the heat.
  10. Broil skewers for 4 minutes. Take them out and flip each skewer over.
  11. Broil for another 4 minutes.
  12. Let them cool off, then apply the rest of the sauce - and ENJOY!!!
Notes
  1. Make sure to check that the chicken is cooked all the way through by cutting into one or two of the chicken pieces. They should be white (not pink) on the inside.
